    Poached Salmon Spinach Salad

    List of Ingredients


    • 2 Tbsp extra-virgin olive oil
    • 1/2 lb. cleaned fresh spinach
    • 1/4 tsp salt
    • 1/8 tsp freshly ground black pepper
    • 1/2 cup chopped yellow onion
    • 3 fresh tomatoes(about 1 1/4 lbs.),peeled,seeded and cut into 1/2 in. pieces
    • Poaches Salmon left over from Poached Salmon with Cucumber-Dill Sauce
    • 1 Tbsp coarsely chopped flat-leaf parsley(optional)


    Instructions


    1. In a skillet,heat 1 Tbsp of the oil over med. heat. When hot,saute the spinach for 1 1/2 min. Mix in the salt and pepper and divide the spinach among 4 plates.
    2. Heat the remaining Tbsp of oil in the skillet. Saute the onion and tomatoes over med. heat until the onion is tender,about 5-6 min.
    3. Arrange the salmon on the spinach and top with the tomatoes and onion. Garnish with parsley,if using.
    4. 4 servings
