    List of Ingredients

    1-1/4 cups all purpose flour
    2/3 cup sugar
    1/2 cup cornstarch
    1 Tbs. poppy seeds
    2-1/4 tsp. baking powder
    1 tsp. salt necessary
    2 Tbs. unsalted butter
    1 cup skim milk
    2 tsp. lemon zest
    1-1/2 tsp. vanilla extract
    1 large egg


    Preheat oven to 350F. Grease and flour an 8 inch baking pan. Combine first 6 ingredients in a bowl. Using a fork, blend in butter until incorporated. Combine remaining ingredients in another bowl. Stir milk mixture into flour mixture until just blended. Pour batter into prepared pan. Bake 35 minutes, or until a tester comes out clean when inserted in center. Remove from pan and cool on a rack.
    This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
