� 1-1/4 cups all purpose flour
� 2/3 cup sugar
� 1/2 cup cornstarch
� 1 Tbs. poppy seeds
� 2-1/4 tsp. baking powder
� 1 tsp. salt necessary
� 2 Tbs. unsalted butter
� 1 cup skim milk
� 2 tsp. lemon zest
� 1-1/2 tsp. vanilla extract
� 1 large egg
Recipe
Preheat oven to 350�F. Grease and flour an 8 inch baking pan. Combine first 6 ingredients in a bowl. Using a fork, blend in butter until incorporated. Combine remaining ingredients in another bowl. Stir milk mixture into flour mixture until just blended. Pour batter into prepared pan. Bake 35 minutes, or until a tester comes out clean when inserted in center. Remove from pan and cool on a rack.
