    Pineapple Meringue Bars

    List of Ingredients

    1/ cup soft butter or margarine
    1/2 cup sifted icing sugar
    2 egg yolks
    1 cup sifed all-purpose flour

    Pineapple Filling:
    1/2 cup sugar
    1 1/2 tablespoons cornstarch
    1 1/2 cups crushed pineapple (do not drain)
    1 tablespoon lemon juice
    yellow food coloring (optional)


    Combine sugar and cornstarch thoroughly in saucepan. Stir in pineapple and lemon juice and set over moderate heat. Cook, stirring constantly, until thickened and clear. Add a few drops yellow food coloring if desired. Cool to lukewarm. Pour over base. Beat 2 egg whites until foamy. Add 1/2 cup sugar gradually and beat until stiff and glossy. Fold in 1/4 teaspoon almond flavoring, and 1/2 cup finely chopped pecans. Bake 25 minutes in a 350 degree oven until meringue is golden.
