Cheddar Potato Bake

List of Ingredients
• 1 can condensed cheddar cheese soup
• 1/3 cup sour cream or plain yogurt
• 1 scallion, chopped
• 3 cups mashed potatoes, stiff, seasoned
• 1 Tbs. unsalted butter, melted
• 2 Tbs. dry breadcrumbs
• 1/4 tsp. paprika
• 1/8 tsp. pepper
Preheat oven to 350°F. Combine first 3 ingredients and salt and pepper to taste in a 1-1/2 quart casserole. Stir in potatoes. Combine butter, breadcrumbs and paprika in a bowl and sprinkle over potato mixture. Bake 30 minutes or until hot.
