    List of Ingredients




    1lb boneless skinless breast cut into 1" chunks
    5 T. Dry Sherry
    1 T. + 2t. Cornstarch
    1 T. Oyster sauce
    2 T. Water
    2 T. Red Sodium Soy Sauce
    1 T. Honey
    1 T. Rice Vinegar
    1t. Aisan (dark) sesame oil
    2 t. canola oil
    1 T. Minced fresh ginger
    2 garlic cloves minced
    3 scallions chopped
    1/2 t. crushed red pepper
    2 celery stalks chopped
    1 red bell pepper seeded and chopped

    Recipe



    1. Combine the chicken, 2 T. sherry, 1T of cornstarch, and the oyster sauce in a medium bowl, set aside to marinade for 5 min
    2. Combine remaining 3 T. sherry, the water, soy sauce, honey rice vinegar, sesame oil, and remaining 2 t. cornstarch; set aside
    3. Heat in non stick wok or large; deep skillet over med-high heat until a drop of water sizzle. Swirl in the canola oil, then add the chicken mixture Stir fry until lightly browned, 2-3 min. Add the ginger, garlic, scallions and crushed red pepper; stir fry until fragrant, about 30 seconds. Add the celery and bell pepper (I do not use this); stir fry until crisp=tender about 2-3min. Stir in the sherry mixture and cook stirring constantly until the mixture boils and thickens and the chicken is just cooked through, 1-2 minutes.
