    1/2 pound uncooked shrimp
    1/4 teaspoon sesame oil
    1/4 teaspoon light soy sauce
    1 pinch white pepper
    8 slices 2 day old bread. If you have no old bread, put fresh bread in
    the refrigerator overnight
    1 quart oil, preferably peanut


    Clean and devein shrimp, and put through a meat grinder. Add sesame oil, soy sauce, pepper and salt, and mix well.
    Use a small cutter, about 1 inch in diameter, and cut 32 rounds from the bread slices.
    Spread the shrimp paste evenly on the 16 rounds of bread, keeping the filling within the outer edges of the dircle. Top each circle with a bread slice and press the edges together gently, to keep the filling
    from coming out during the deep-frying process.

    Heat the oil until it is hot, 375 F. Drop each round into the oil, turning to brown on each side, and fry for 1-2 minutes. If you deep-fry longer, the toast will absorb the oil and become greasy. Remove and drain on paper toweling and serve hot.
