4 medium red potatoes, cut in bite-size pieces
2 Tbs olive oil or vegetable oil
4 cloves garlic, finely chopped
1/2 tsp. dried rosemary
salt and pepper
1/2 cup shredded Parmesan cheese

Preheat grill to medium-high, or preheat oven to 450 degrees. Spray an
18-by-24-inch sheet of aluminum foil with non-stick cooking spray. Center
potatoes evenly on aluminum foil. Drizzle with oil. Sprinkle with garlic,
rosemary, salt and pepper. Bring up foil sides. Double-fold top and ends to
seal, making one large foil packet, leaving room for heat circulation
inside. Grill 15-20 minutes in covered grill, or bake 30-35 minutes on
cookie sheet in oven. Sprinkle with Parmesan cheese before serving. Makes 4
servings.
