    Serves: 4-6 - Prep. time: 5 minutes (need cooked rice) - Cooking time: 20 minutes

    List of Ingredients




    2 cups frozen hash brown potatoes
    1 cup cooked brown rice (or your favorite)
    1/2 cup chopped green onions
    1/3 cup salsa
    1/3 cup frozen corn kernals
    4 to 6 whole wheat or regular flour tortillas

    Recipe



    Cook the potatoes according to package directions in a nonstick skillet until lightly browned. Add the remaining ingredients, except the tortillas, and cook another 5 minutes, stirring occasionally, until heated through. Spoon a line of mixture down the center of each tortilla, roll up, and eat.
