    Quick Tortilla Pizza

    Recipe Introduction

    Total preparation time: 15 to 25 minutesServes 4

    List of Ingredients

    4 large flour tortillas (see Note)
    One 16-ounce can fat-free refried beans
    2 large tomatoes, washed and chopped
    1/2 cup shredded reduced-fat sharp cheese
    1/2 head iceberg lettuce, outer leaves removed, washed, dried, and shredded
    2 cups salsa
    12 large ripe pitted black olives, very thinly sliced (leave off the olives for an even lower fat version)
    1/4 cup nonfat sour cream

    Recipe

    Preheat broiler.

    Place tortillas on a baking sheet. Layer beans, tomatoes, and cheese evenly among tortillas and broil 2 to 3 minutes, or until cheese melts.

    Remove from oven and top each with equal portions of the shredded lettuce, salsa, sliced olives, and sour cream.

    Note: To warm tortillas in the microwave, place flat in microwave and heat on medium 45 to 50 seconds until hot; do not overheat. Oven method: Wrap tortillas in aluminum foil and warm in 250�F oven 10 minutes.

    Note: To make even lower in fat, use fat-free cheese or fat-free tortillas.
