Sweet & Sour Chicken Casserole

1 pound Extra Lean Ground Chicken
2 cups frozen mixed vegetables, of your choice (I used peppers, green beans, mushrooms & baby corn)
10 1/2 ounces condensed tomato soup
3 tablespoons vinegar
2 tablespoons Brown Sugar Twin
1 (14 ounce) crushed pineapple in juice, undrained
1 tablespoon soy sauce, low sodium
2 cloves garlic, minced (or use garlic powder)
Brown the chicken in non-stick frying pan. Drain & blot to remove excess drippings.
Combine remaining ingredients in slow cooker and stir in chicken.
Cook on low in crock pot for 7-9 hours, high for 4 hours. Can be made in the oven, cook at 300 degrees for 3-4 hours. Serves 5.
