List of Ingredients
1 pound cooked lean ground beef
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
2/3 cup water
1 envelope taco Seasoning Mix
1 can black beans, rinsed and drained
1 can diced tomatoes
1 1/2 cups canned refried beans
4 oz shredded cheese (cheddar, Colby, etc.)
6 item Mission Regular flour tortillas - soft taco size
Cook beef, peppers, and onions in a skillet until meat is done. Add the water and taco seasoning and bring to a boil. Simmer for 2 minutes. Rinse the beans and add them to the skillet along with the tomatoes. Simmer uncovered for 10 minutes.
To make lasagna, place 2 flour tortillas in the bottom of a greased 9X13 pan. Spread tortillas with refried beans and then add 1/3 of the meat mixture. Top with shredded cheese. Repeat these steps until you have 3 layers. Cover and bake at 350 degrees for 25-30 minutes. You can also make this in 2 8" square pans. Eat one and freeze the other for later! Makes 9 servings per square pan or 18 total.
