    Can be made into 3 mini loafs or muffins!


    List of Ingredients


    • 1 1/2 Cup Dates, chopped
    • 1 1/2 Cup Boiling water
    • 3 Tb. Vegetable oil/shortening
    • 2 7/8 Cups Flour
    • 1 1/2 Ts. Vanilla
    • 1 1/2 Ts. Baking soda
    • 1 1/2 Cup Brown sugar
    • 2 1/4 Ts. Baking powder
    • 3/4 Ts. Salt
    • 1 1/2 Cup Chopped nuts


    Instructions


    1. Combine dates, water and oil/shortening. Let cool.
    2. Combine the baking soda with the flour and mix well.
    3. Add the brown sugar, baking posder, vanilla, salt and nuts to the date mixture. Mix well.
    4. Gently fold in the flour and baking soda mixture into the date mix. If too dry, add a little more water.
    5. Bake in greased loaf pans/muffin pan at 325 F. for 25-30 mintues, or until cooked through.
