Boneless chicken tenderloins-thawed
1 bottle buttermilk ranch dressing
1 box Cheese-It crackers
I use approximately 15-18 chicken tenderloins for this recipe. Pour the bottle of ranch dressing in a large ziploc baggie and place the chicken in the baggie also. Toss around to thoroughly coat the chicken with the dressing. Crush the crackers in a separate large ziplock baggie—the extra large baggies work really well for this. Once the crackers have been crushed, you can add some seasoning if you like but it isn't necessary. Place all of the ranch dressing coated chicken in the baggie with the crushed crackers and toss this around to coat the chicken with the crushed crackers. Place on a greased baking sheet and top with any remaining crushed crackers. Bake for 30 minutes at 350 degrees. This chicken has great flavor and stays very tender and moist, it can even be reheated in the microwave for leftovers without becoming tough or rubbery.
