    Grapenuts Apple Bread

    List of Ingredients

    Sift together
    2 cups flour
    2 1/2 tsp baking powder
    1 tsp salt
    1 tsp cinnamon (this is a great place to use the Saigon cinnamon!)
    1/2 tsp ground ginger
    1/4 tsp ground cloves

    In another bowl, with a hand mixer, blend the following
    2/3 cup light brown sugar, packed
    2 eggs
    2/3 cup milk
    3 Tbs molasses
    1/4 cup oil

    Fold in
    1/2 cup Grapenuts cereal
    1 peeled, shredded tart apple (I used one large Fiji apple, but Granny Smith would be good also)
    1/2 cup chopped nuts, optional (pecans or walnuts would be nice)


    Preheat oven to 350
    Grease one large/regular loaf pan and one mini loaf pan, set aside.

    Pour into a well-greased loaf pan. Bake for 30-40 minutes at 350. (Use the standard toothpick test to test for doneness, and watch carefully - all ovens cook differently, and it may take more or less time for you than it did for me.)

    Cool for 10 minutes in pan then turn out on rack.

    Most quickbreads are better the next day. As soon as they are cool enough to handle, wrap them in plastic wrap and leave out at room temp - they will be moister the next day and the flavor will be more developed.
