Shrimp Quesadilla Recipe

One 10 inch Flour Tortilla
6oz shrimp 40\50 count
1 cup Spinach Fresh
� cup Pepper jack Cheese
� cup Cheddar Cheese
� Stick Butter
Salt and pepper to taste

M.O.P.: Two saut� pans better to use non stick one large place on low heat and put � sticks of butter in pan allow to melt. Smaller pan � of stick of butter allow to heat at med heat. When butter is melted add in shrimp and saut� shrimp till cooked about 4-5 minutes. In larger saut� pan place flour tortilla shell and allow it to cook may puff up (that�s ok bubbles will reduce will flipped). Flip shell and sprinkle with cheese on half of shell. Now add in spinach back to the skillet with shrimp and saut� together add in remaining cheese and allow to melt. Transfer shrimp and spinach to one side of the shell and fold over to make a half moon shape. Allow to crisp or toast up. Place on cutting board cut in half and repeat with it quartered. Serve with a Fresh Pico or Salsa and Sour Cream.
