Recipe Introduction
Saluting comes from a tradition that belonged to the medieval knights. Shaking hands
was the way to show you carried no hidden weapons. Pulling up the visor of your
armor to show your face was just as important - it showed you were a a friend. This
became the widespread custom of nodding or tipping your hat as a greeting. In the
ranks of the military, it became the formal salute.

21 Bean Salute
20 oz assorted dried beans (we always try to put in 21 different kinds, maybe some
barley, too)
3 Tbs dried chives
1 tsp salt
1 tsp savory
1/2 tsp cumin
1 bay leaf
1/4 tsp ginger
Recipe
Sort and rinse beans. Soak overnight in 9 cups water. Drain. Add 5 cups water and
spices. Cook until tender.
