Roasted Reds with Herbs
1-1/2 lbs red potatoes, cut into 1-1 1/2 inch chunks
1 cup each thinly sliced medium carrots and leeks
1/2 cup dry white wine or chicken broth
1 tbsp olive oil
2 cloves garlic, minced
1 tsp each chopped fresh rosemary and thyme
1 tsp salt
1/2 tsp coarsely ground pepper
2 tbsp chopped parsley
Recipe
Toss all ingredients except parsley in 13x9x2-inch baking pan. Roast at 375?F, 50-60 minutes or until potatoes are cooked and browned; stir every 10-15 minutes. Toss with parsley and serve as a side dish.
Makes 4 servings.
