Sweet Potato Discs

3 medium sweet potatoes (raw & scrubbed)
Olive oil
Salt & pepper



Recipe



Slice sweet potatoes into approx 1/4 inch round disks and place on baking
sheet that has been lightly coated with cooking spray. Lightly brush tops
with olive oil and sprinkle with salt & pepper. Bake for 10 minutes at 400
degrees. Then turn over each round disk, light brush new sides with oil and
sprinkle with salt & pepper, and bake another 10 minutes.

Note: This can also be done with regular baking potatoes
