Twice Baked Potatoes
6 baking potatoes
salt and pepper
Marg or butter
Milk
1/4 c. chopped onion (I omit this)
3/4 c. grated cheddar cheese
3/4 grated Mont Jack cheese
1 box frozen chopped spinach thawed and pressed
dry (I omit this too)
Recipe
Prepare potatoes in 400 oven for 1 hour, or nuke em!
While potatoes are still hot, cut a top off or cut in two. Scoop
out pulp
carefully, leaving a thin shell. Mash potatoes adding salt pepper
and marg.
to taste and milk as needed. Stir in onion and cheeses, and
spinach. Spoon
potato mixture back into shell. Bake again in preheated 400 oven
for about
20 minutes or till lightly brown. Freezes well.
Recipe doubles or triples well.
