    Zucchini Dipsticks

    1/4 cup margarine, melted
    4-5 medium zucchini, unpeeled, cut into 3 inch sticks
    1/2 cup breadcrumbs
    1/2 cup grated Parmesan cheese
    1/2 tsp garlic powder
    1/2 tsp salt
    1/4 tsp pepper
    1 egg

    Recipe




    Brus about half the margarine over a large baking sheet. Set aside. In a large plastic resealable bag, toss together breadcrumbs, cheese, garlic powder, salt and pepper. Beat egg in a shallow bowl or pie plate. Dip zucchini sticks, one or two at a time, into the beaten egg. Let excess egg drip off and then drop sticks into bag of breadcrumb mixture. Shake to coat. REmove coated zucchini from bag and place on baking sheet. Repeat with remaining zucchini. Drizzle remaining margarine evenly over breaded zucchini sticks.

    Bake at 425� for 12 - 15 minutes, turning once half way through baking time. Serve with flavoured mayonnaise or your favourite dipping sauce.

    Serves 4-6
