Yield: 6 servings
� cup chopped carrots
� cup chopped green pepper
1/2 cup chopped onion
� cup chopped celery
4� tablespoons butter
1/3 cup flour
1 quart seasoned chicken stock
12 ounces Cheddar cheese, grated
4 cups light cream
Salt and white pepper to taste
Recipe
Saut� vegetables in butter until tender in a 3-quart saucepan. Blend in flour. Cook one
minute, stirring constantly. Add stock and cook until thickened, stirring. Stir in cheese.
Add cream. Season to taste. **
