    Butterscotch Muffins

    Makes 1 1/2 dozen

    2 c. flour
    1 c. sugar
    1 pkg. (3.4 oz.) instant butterscotch pudding mix
    1 pkg. (3.4 oz.) instant vanilla pudding mix
    2 t. baking powder
    1 t. salt
    1 c. water
    4 eggs
    3/4 c. vegetable oil
    1 t. vanilla extract

    Topping Ingredients
    2/3 c. pkd. brown sugar
    1/2 c. chopped pecans
    2 t. ground cinnamon


    Recipe



    In a large bowl, combine the flour, sugar, both pudding mixes, baking powder and salt. Combine the water eggs, oil and vanilla; stir into the dry ingredients just until moistened.

    Fill greased or paper-lined muffin cups 2/3 full.

    Combine the topping ingredients; sprinkle over batter. Bake at 350 degrees for 15 to 20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
