    CRUNCHY PEANUT BUTTER AND HONEY MUFFINS

    2 Eggs
    1/4 cup Oil
    1 cup Buttermilk
    1 cup Peanut butter
    1 teaspoon Vanilla -- in smaller bowl comb
    1/2 cup Honey
    1 cup Flour -- whole wheat
    1 cup Cake flour
    2 teaspoons Baking powder
    1 teaspoon Baking soda
    1/2 teaspoon Salt
    1/2 cup Unsalted peanuts -- chopped

    Recipe



    Combine wet and dry mixtures and fold together until just mixed. Spoon into prepared pan. Sprinkle chopped peanuts on each muffin.
    Bake at 375 F for 25 minutes. Remove from pan and cool on rack.
