Lemon Honey Creamcheese Bran Muffins!

MUFFINS
2 boxes martha white honey bran muffin mix
1 small lemon, zest of
1/4 cup chopped walnuts (optional)


ICING
1 (3.00 ounces) package cream cheese
1/4 cup sweet unsalted butter
1 teaspoon pure vanilla extract, exstract
2 1/2 cups sifted powdered sugar
1 small lemon, juice of (the remainder of the zested lemon)



Recipe



1. prepare 2 muffin mixes by package directions.
2. add squirt of lemon and the zest.
3. mix briefly.
4. stir in the walnuts.
5. spoon in muffin cups-follow package directions for cooking time etc.
6. cool completely.
7. Icing: beat with electric mixer, the softend cream cheese and butter with vanilla and lemon juice till creamed.
8. add sifted powdered sugar a 1/4 cup at a time, mix well and scrape bowl often.
9. ice muffins.
10. BE sure to refrigerate!
