    Cantaloupe Cake with Cream Cheese Frosting

    Cantaloupe Cake

    3/4 cup vegetable oil
    1-3/4 cups sugar
    3 eggs, at room temperature
    2 cups self-rising flour
    1 tsp cinnamon
    1 tsp baking soda
    1 cup diced fresh cantaloupe
    1 cup diced fresh apple
    1 cup white raisins

    Cream Cheese Frosting
    3 ounces cream cheese
    1 tablespoon warm milk
    2 1/2 cups confectioners sugar
    1 teaspoon vanilla


    Preheat oven to 375 degrees F. Grease a 9"x13" baking pan. Combine oil, sugar
    and eggs, beat until smooth. Sift together flour, cinnamon and baking soda;
    add to oil mixture and stir until
    combined. Fold in cantaloupe, apple, and raisins. Spread mixture in prepared
    pan. Bake 20 min. Lower oven temperature to 325 degrees. Bake 10 minutes
    longer, until a tester inserted in the center comes out clean.

    Cream Cheese Frosting

    Mash cheese with milk. Add sugar, gradually, and vanilla. Beat until creamy.
    Any other desired flavoring may be substituted for the vanilla
