Classic Jam Roly Poly

8oz selfraising flour
1 teaspoon baking powder
zest of one lemon
5oz of suet - either beef or vegetarian.

5/6 oz of
: Sift together 8oz

: powder and a pinch of salt. Add
: the finely grated zest
: of one lemon and 5oz of suet - either beef
: or vegetarian. Work
: together to form a
: breadcrumb consistency.
: Add about 4 fl oz
: (125ml) milk a little at a time until a
: soft but not sticky dough is
: Wrap in clingfilm and
: allow to rest for half an hour.
: Roll the dough out
: into a rectangle and spread with 5/6 oz of
: strawberry jam, leaving about a half inch
: border. Brush the
: border with milk and roll up. Pinch the
: ends to seal jam inside.
: Wrap the roll first in
: greaseproof paper and then in foil and tie
: the ends. Steam for 2 hours, topping up
: the boiling water as
: necessary. Serve cut into thick slices
: with custard or cream.
