    Fluffy Coffee Layer Cake

    1/2 cup shortening
    1 1/4 cups sugar
    3 eggs
    2 1/2 cups sifted cake flour
    3 teaspoons Rumford Baking Powder
    1/4 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/3 cup cocoa
    3/4 cup strong cold coffee


    1. Cream shortening, add sugar gradually, creaming until light and fluffy.

    2. Add eggs, one at a time, beating well after each addition.

    3. Sift flour, Rumford Baking Powder, salt, cinnamon, nutmeg, and cocoa together; add to creamed mixture alternately with the coffee. Beat until smooth.

    4. Pour into two greased 9-inch layer pans, and bake in a moderate oven (375 F) 25 minutes.

    5. When cool, ice with Mocha Frosting or Jiffy Chocolate Frosting.
