    Kiwi Meringue Pie

    3 x Egg whites (large eggs)
    1 tsp Vanilla
    1/4 tsp Cream of tartar
    1 dsh Salt
    1 cup Sugar
    Whipped cream
    3-4 Kiwi fruit


    Have egg whites at room temperature. Add vanilla, cream of tartar & salt.
    Beat until frothy. Gradually add sugar, a small amount at a time, beating until very stiff peaks form & sugar is dissolved. Cover cookie sheet with waxed paper. Using a 9-inch pie pan, draw circle on the paper. Spread meringue over circle. Shape into a shell with spoon making 1/2-inch thick center with sides 3/4-inch high. Bake at 375 for 1 hour. Turn off heat & let dry in oven for 2 hours. Cover with whipped cream. Peel & thinly slice kiwis & cover whipped cream with fruit.
