    Lemon Pecan Pie

    6 whole eggs
    1/3 stick margarine or butter, melted
    2-1/4 cups sugar
    3/4 cup pecan pieces
    1 teaspoon lemon extract
    Juice of half a lemon
    8-inch unbaked pie shell


    Mix ingredients in order listed, but do not use a mixer or beat until frothy. Pour into pie shell. Place in preheated 350-degree oven and bake 10 minutes. Reduce oven temperature to 300 degrees and bake until crust is browned and pie is set.
