    Lemonade Cake

    cup boiling water
    1 small package lemon Jell-O
    1 package lemon cake mix
    4 eggs
    cup vegetable oil
    a can frozen lemonade concentrate, thawed
    1 cup sugar


    Combine the cake mix, eggs and oil in a mixing bowl. Mix with an electric mixer until combined thoroughly. Dissolve the Jell-O in the boiling water, then add to the cake mix. Beat another 3 minutes, then pour into a greased and floured bundt pan. Bake at 300 degrees F for about 1 hour.
    While the cake is baking, combine the thawed lemonade concentrate and sugar in a bowl. Remove the baked cake from the oven and let cook about 5 minutes in the pan. Transfer to a serving platter. Poke holes on the top of the cake and pour the lemonade mixture over. Let cool completely.

    Garnish with sliced lemons and mint leaves.
