    Light & Fruity PieLight & Fruity Pie

    * 1 package (4 serving size) Strawberry flavor gelatin
    * 2/3 cup boiling water
    * 2 cups ice cubes
    * 1 container (8 ounces) frozen non-dairy whipped topping, thawed
    * 1 cup sliced fresh strawberries
    * 1 baked pie shell (or graham cracker crust)


    In a small bowl dissolve gelatin in boiling water. Add ice. Stir for 2 or 3 minutes or until gelatin thickens. Remove and discard the unmelted ice. Whisk in whipped topping. Fold in strawberries. Refrigerate, if necessary, until mixture mounds when spoon. Spoon into crust. Refrigerate at least two hours or until set. Garnish as desired. Store in the refrigerator. Alternate method: Whisk in whipped topping. Spoon the filling in the pie crust. Gently spread sliced strawberries on top and finish spooning the rest of the pie filling on top of the strawberries. Optional: fold one cup of sliced fruit into the filling and make two layers of filling with another cup of fruit.
