    This cake has really yummy holiday flavor great for entertaining or just for the family.

    Ingredients

    * 2 C. flour
    * 1 1/4 C. sugar
    * 1 1/2 tsp. baking powder
    * 1 tsp. salt
    * 1/2 tsp. cream of tartar
    * Juice and rind of 1 small orange + water to make 1/2 C.
    * 1/2 C. shortening
    * 2 eggs
    * 3/4 C. raisins
    *
    * Sauce:
    * 1/4 C. sugar
    * 1/4 C. orange juice
    * 2 tsp. rum extract

    Directions

    Sift together the dry ingredients. Add orange rind, juice and shortening. Add eggs and beat 2 minutes. Fold in raisins. Pour into a greased foil-lined loaf pan. Bake at 350 degrees for 1 hour or until done. Remove cake from pan. Top with sauce ingredients which have been mixed together.

    Yield: 1 loaf
