    List of Ingredients

    2 cups flour
    1-1/4 cups sugar
    1 teaspoon baking soda
    1 teaspoon salt
    1/4 teaspoon ground cloves
    1 teaspoon cinnamon
    1/4 teaspoon allspice or nutmeg
    2 large eggs
    1/4 cup vegetable oil
    1/3 cup milk
    2 cups fresh rhubarb, diced
    4 Tablespoons butter
    1/2 cup light brown sugar
    2/3 cup flour
    3/4 cup coconut
    1/4 cup chopped walnuts


    Sift dry ingredients together in a bowl. Mix eggs and oil together in another bowl and add to the dry ingredients. Blend in milk, then fold in rhubarb. Pour into greased 13 x 9 x 2-inch pan. Spread topping over unbaked cake and bake at 350 degrees for 50 minutes.

    Topping: Cream butter and sugar together in a medium bowl. Add flour, coconut, and nuts. Mix well.

    Serves: 10 to 12
