    White Chocolate Cake

    List of Ingredients

    1/2 pound white chocolate (melted over hot water)
    1 cup butter (margarine can be used)
    2 cups white sugar
    4 eggs separated; beat whites
    1 teaspoon vanilla
    1 teaspoon baking powder
    2 1/2 cups cake flour (if self-rising is used, omit baking powder)
    1 cup buttermilk
    1 cup chopped pecans
    1 cup angel flaked coconut


    For the cake, melt white chocolate over hot water in a double boiler; set aside. In a bowl, cream together butter and sugar. Beat in egg yolks. Add vanilla and melted chocolate. Sift together flour and baking powder and add alternately with buttermilk. Fold in beaten egg whites. Stir in nuts and coconut. Grease 3 9-inch pans, then place waxed paper inside. Pour mixture into pans. Bake at 350 degrees about 45 minutes. If a tube pan is used, bake for 75 minutes.

    Use your favorite butter-cream frosting.

    Serves 12 or more.
