    Serves: 6

    1 can (14-1/2 oz.) beef broth
    1/2 tsp. crushed fresh garlic
    1/4 tsp. coarsely ground black pepper
    1 bay leaf
    1/4 tsp. dried marjoram
    1/4 tsp. dried thyme

    2 c. sliced fresh mushrooms
    1 medium yellow onion, cut into thin wedges
    6 pieces French bread, each 6-in. long
    1 lb. + 2 oz. roast beef, thinly sliced
    6 oz. block-style nonfat mozzarella cheese, thinly sliced


    To make broth: Combine all ingredients in 1-qt. saucepan; bring to a boil. Reduce heat, cover and simmer for 15 minutes or until flavors are well blended. ....... Meanwhile in a medium nonstick skillet, coated with nonstick cooking spray, Sauté mushrooms and onions, for 5 minutes or until vegetables are tender. Add a little water if mixture gets too dry. ...... To assemble sandwiches: slice French bread in half lengthwise. Arrange 3 oz. of beef on bottom half of each piece. Top with 1/6 of mushroom mixture and 1 oz. cheese. Replace tops and cut each sandwich in half. ..... Arrange sandwiches on a microwave-safe platter. Cover with paper towel and microwave on high for 2 minutes or until cheese is melted. OR In conventional oven: Wrap in aluminum foil and bake at 400-F for 10 minutes or until cheese melts. Place sandwiches on a serving platter and serve with broth.
