Italian Sandwich with Pesto

If you`re not a pesto lover, enjoy your sandwich with a zero-POINT spread. Try balsamic vinegar with a little salt and pepper, or a spicy whole-grain mustard.
List of Ingredients
2 Tbsp basil, chopped
1/2 oz pine nuts, about 1 1/3 tbsp, toasted
1/2 tsp minced garlic
1 Tbsp olive oil
2 medium hard roll(s)
1 1/2 oz part-skim mozzarella cheese, thinly sliced
2 small tomato(es), plum, thinly sliced
1 cup lettuce, mixed leaves, washed, dried and roughly torn
1/2 cup sun-dried tomatoes, without oil, soaked in hot water and cut in half
Combine basil, pine nuts, garlic and oil and blend in a food processor until smooth. Spread rolls evenly with sauce.
Top each roll with equal amounts of cheese, tomatoes, lettuce and sun-dried tomatoes.
