    Open Face Deli Melts

    1 medium onion, sliced
    1 green pepper, sliced
    2 tbl Fat-free Ranch dressing
    2 Bagels split
    Dijon mustard Opt.
    1/2 pound sliced turkey, ham or lean beef
    1/2 cup grated swiss cheese


    Place the sliced onions and peppers in a microwave-safe baking dish, cover with a non-metallic lid or plastic wrap and cook for 4 to 5 minutes. Stir halfway through cooking. Drain and then toss with the ranch dressing. Spread the bagel halves with mustard: top with meat and then sprinkle with cheese. Place on a baking sheet and broil until the cheese is melted. Top each sandwich with some of the onion mixture and serve.

    Makes 4 servings
    Each serving: 1/2 bagel
