    PICKLED EGG SALAD SANDWICH

    4 large eggs
    1/2 cup low-fat mayonnaise
    4 tablespoons finely diced celery
    2 tablespoons minced red onion
    1/4 cup Mt.Olive Relish, drained
    1/4 cup finely chopped Mt.Olive Hot Cherry Peppers
    salt and pepper
    4 lettuce leaves
    8 slices bread

    Recipe



    Put the eggs in a pot; cover them with cold water and bring to a boil. Immediately turn off the heat and cover the pot. After the eggs sit for 6-1/2 minutes, pour the water off and run them under cold water until they have cooled.
    Stir together mayonnaise, celery, onion, pickle relish and pickled cherry peppers. Peel and chop the eggs. Add the mayonnaise mixture and season with salt and pepper to taste.
    To assemble the sandwiches, spread egg salad on 4 of the slices of bread, dividing evenly. Top each with lettuce leaf and remaining slice of bread. Cut in half and serve.

    Makes four sandwiches.
