BEER SOUP

List of Ingredients
� cup finely chopped celery
� cup finely diced carrots
� cup finely diced onions
� cup butter
� cup flour
� teaspoon dry mustard
2� pints chicken stock
8 ounces grated cheddar cheese
2 tablespoons grated Parmesan cheese
1 (12 ounce) bottle or can of beer
salt and pepper to taste
Recipe
Saut� vegetables in butter till tender, but not brown. Blend in flour, mustard and chicken stock. Cook 5 minutes. Blend in cheeses and beer. Simmer 20 minutes. Season to taste. NOTE: If reheated, use low heat as it scorches easily.
