    Spicy Overnight Chicken

    List of Ingredients

    • 1-lb boneless, skinless chicken breasts
    • 6 to 8 tbsp apple juice, divided
    • 2 tbsp mustard seed
    • 1 1/2 tsp ground tumeric
    • 1 tsp ground coriander
    • 1/2 tsp ground cinnamon
    • 1 tsp ground cloves
    • 1/2 tsp crushed red pepper
    • 2 tbsp paprika
    • 1/2 tsp pepper
    • 1/2 cup orange juice
    • 1/4 cup nonfat chicken broth


    1. Spray shallow baking dish with cooking spray. Arrange chicken breasts in baking dish and brush with 2 to 4 tbsp apple juice to moisten. Combine remaining ingredients in food processor or blender and process until completely blended. Pour over chicken. Cover and refrigerate for 24 hours. Bring chicken to room temperature. Preheat oven to 325 degrees F. Bake chicken 20 to 25 minutes, until tender. Remove from oven and pour marinade into separate bowl. Preheat broiler on high heat. Broil chicken 5 to 5 minutes perside, basting several times with marinade.
