    I love strawberry bread this is a great low point healthy version (the original has lots of oil in it) I made a lot of changes to an old favorite version.

    List of Ingredients




    2 cup fresh ripe strawberries

    1 3/4 c all purpose flour

    1 tsp baking soda

    scant 1 tsp salt

    1/4 tsp baking powder

    1/2 cup Splenda

    1 large ripe banana

    2 egg whites, lightly beaten til frothy

    1/3 cup water

    Recipe



    Crush half the strawberries in a saucepan, and simmer over medium heat 2 minutes, stirring constantly. Slice rest of strawberries and mix w/the
    cooked berries. Chill.

    Preheat oven to 350F.

    In a medium bowl combine all dry ingredients except the splenda.

    In a larger bowl mash the banana.

    Mix the splenda in.

    Mix the egg whites

    Mix in the water

    Add flour mixture to wet ingredients. Blend well.

    Add strawberries and pour into a nonstick bread pans

    Bake for 40 (start checking after 40 min every 5 min) to 1 hour or until toothpick inserted in center comes out clean.

    Cool for about 10 minutes and gently pry off the sides and turn out onto
    racks to cool.

    I calculate 18 slices (9 per loaf) @ 1pt each (someone may run this through to double check this is my calculations)
