    Fruit Puff Pancake

    List of Ingredients


    • 5 egg substitute equivalents
    • 1/2 C.skim milk
    • 1/2 C. flour
    • 1 T vanilla extract
    • 1 1/2 C. Strawberries
    • 1 C. Blueberries
    • 1 medium Banana
    • 1 T Lemon Juice


    Instructions


    1. Preheat the oven to 425*

    2. Spray the bottom of a pie plate or oven proof skillet with non stick cooking spray (butter flavor is nice)

    3. In a large bowl combine eggs and milk. Add the flour and vanilla.

    4. Pour batter into the prepared pan and place it in the oven

    5. Bake for 15-20 minutes until batter is puffed and edges are browned

    6. While the Puff Pancake is cooking slice strawberries & bananas toss w/ lemon juice mix in blueberries & splenda

    7. Remove the puff pancake,fill the cener with fruit, cut into wedges and serve
