    I found this cookbook at a garage sale and it is awesome all the recipes sound soo good I am posting ones that I plan on using!


    List of Ingredients


    • 2 Cups ooked Chicken, diced
    • 1 C. finely chopped celery
    • 1/4 C. crushed unsweetened pineapple, drained
    • 2 8oz cans water chestunts, drained and chopped
    • 2 Scallions chopped
    • 1/4 C. Low Fat Mayo
    • 1 T. lite soy sauce
    • 1tsp lemon juice
    • 8 large tomatoes, hollowed


    Instructions


    1. In a large bowl, combine the chicken, pineapple, celery, water chestnuts and scallions
    2. In a separate bowl, combine the mayo, soy sauce and lemon juice, mix well
    3. Add the dressing to the chicken mixture and toss.
    4. Cover and refrigerate for 2-3 hours
    5. For each serving place a small scoop (3-4oz) of chicken salad in the hollowed out tomato

    8 servings (1 tomatoes & 3-4oz chicken salad) Totally Core (if you use Fat Free Mayo)! 155cal/6g fat/3g fiber 3pts each serving
