Source of Recipe
I love Mexican and this is a tasty low point version of a filling taco salad.
List of Ingredients
1 lb 95% lean Ground Sirloin
1 pkg. Taco Seasoning
1 C. Water
1 Head of Lettuce Chopped
1-2 Tomatoes Diced
1 Can Red Kidney Beans (drained and rinsed)
1 Avocado Diced
1/2 C. Red Fat Cheddar
2 oz Baked Doritos
Fat Free Sour Cream
In a large skillet cook ground sirloin, breaking up as you cook it. When cooked thoroughly drain off any excess grease (there will not be much). Wipe out skillet and return meat.
Add 1 Cup of water and 1 package of taco seasoning. Let simmer 10 minutes.
In a large serving bowl layer the ingredients as follows:
Lettuce, tomatoes, taco meat, kidney beans, shredded cheese, avocado and crushed doritos.
Serve with Salsa and Fat Free Sour Cream (add points as needed with the sour cream)
Serves 6 @ 4.5 points each.
