    List of Ingredients




    2 cups all purpose flour
    1 tsp baking powder
    1 tsp cinnamon
    2 cups sugar

    1 cup oil
    5 eggs
    3 cups shredded carrots
    1 cup chopped walnuts
    1 cup chopped dates
    1 cup golden raisins

    Recipe



    Preheat oven to 350�.
    Mix dry ingredients well. Add oil and eggs, stir to mix, then fold in carrots, nuts, dates and raisins. Stir until well mixed.

    Bake in a greased or sprayed 11" X 16" pan 1 hour or 3-8" pans for 30 minutes. Check with a toothpick to see if it's done.
    Can use a 9" X 13" pan, but will have to bake longer.

    Cream Cheese Frosting

    1 8 oz pkg cream cheese
    1 stick butter
    2 tsp vanilla
    1 lb powdered sugar

    Beat together until light and creamy.
    May or may not need the full lb of powdered sugar. Add it until you get the consistency you want for spreading.
