    • 4 SLICES BACON
    • 2 LARGE ONIONS - CHOPPED
    • 3 STALKS CELERY - CHOPPED
    • 8 CUPS RAW POTATOES - DICED
    • 8 CUPS CHICKEN BROTH
    • 1/2 TSP SALT
    • 1/4 TSP PEPPER
    • 2 CUPS HALF AND HALF CREAM
    • 2 CUPS GRATED CHEDDAR CHEESE


    Instructions


    1. COOK BACON OVER LOW HEAT - RESERVE 3 TABLESPOONS BACON DRIPPINGS
    2. SAUTE ONIONS AND CELERY IN DRIPPINGS UNDER TENDER
    3. ADD POTATOES, CHICKEN BROTH, SALT AND PEPPER. SIMMER UNTIL TENDER
    4. REMOVE FROM HEAT. PUREE HALF OF MIXTURE IN A BLENDER. RETURN PUREE TO RESERVED MIXTURE IN POT AND STIR IN HALF ANDHALF AND CRUMBLED BACON.
    5. ADD GRATED CHEESE AND CONTINUE TO COOK UNTIL CHEESE IS MELTED.
    6. GARNISH WITH TOPPINGS.
