    Chef's Choice Winter Fruit Salad

    Better Homes and Gardens Low Calorie 1985


    List of Ingredients


    • lettuce leaves
    • 4 cups torn lettuce
    • 1 tsp lemon juice
    • 2 medium apples, cored
    • 1/2 cup shredded carrot
    • 1/4 cup raisins or chopped pitted prunes
    • 3 tbs slivered almonds
    • 2 tbs shredded coconut
    • 1/4 cup reduced calorie mayo or salad dressing
    • 2 tbs low cal orange marmalade
    • 2 tsp milk


    Instructions


    1. Line a salad bowl with lettuce leaves. Place the torn lettuce in bowl.
    2. In small bowl combine lemon juice and 1/4 cup water. Slice the apples into the lemon juice mix; drain. Arrange apples around edge of salad bowl. Arrange carrot, raisins, almonds, and coconut in a circular design on top of lettuce. Cover and chill.
    3. For Dressing:

      Combine mayo, yogurt, marmalade and milk. cover. Chill. Before serving, spoon dressing over salad; toss lightly to coat. Serves 6 to 8
