    Fresh Pasta Salad

    List of Ingredients




    Fresh Pasta Salad
    (4 servings)

    1/4 C. olive oil
    2 C. fresh broccoli florets
    2 C. thinly sliced zucchini
    1 C. cherry tomatoes, halved
    1/4 C. thinly sliced green onions
    2 minced garlic cloves
    1 tsp dried basil
    1/2 tsp salt
    8 oz cooked rotini (or similar pasta)
    1/2 - 1 cup freshly shredded parmesan cheese

    In large frying pan or wok, stir-fry all ingredients except pasta and
    cheese over medium-high heat until broccoli is barely tender (3-5
    minutes). Remove from heat. Toss vegetable mixture with pasta and
    cup of parmesan cheese. Sprinkle more cheese on top, to taste. Serve
    hot or cold. Do not double.
