More Than A Spinach Salad

List of Ingredients




1 1/2 pounds crisp fresh spinach
1 red onion, thinly sliced
2 small-to-medium zucchini, sliced into thin matchsticks
3 hard-boiled egg whites, thinly sliced
DRESSING
2 raw eggs
2 dashes of Worcestershire sasuce
3 Tbsp. grated Parmesan cheese
juice of 1 1/2 lemons
1 tsp. Dijon mustard
1/2 cup extra virgin olive oil
1 1/2 tsp. sugar
freshly ground pepper to taste
salt, if desired
6 slices bacon, cooled, drained, and crumbled






Recipe



Wash the spinach thoroughly to remove all sand, drain, and dry. Place the spinach, onion, zuccini, and cooked egg whites in a large salad bowl. Chill until ready to serve.
Combine all dressing ingredients except the bacon in a blender or food processor. Add the bacon and the dressing to the salad; toss and serve.
