    Pop Fruit Salad

    List of Ingredients




    "If you like fruit, then this salad will blow you and your guests away. It's simple to prepare, and contains great texture and flavor. Allow the fruit to sit in the oil and cheese for 10 minutes to enrich the flavor."

    mixed greens (red leaf, chicories, endive, radicchio, butter, etc.) for 4
    servings
    2 Tbsp. extra virgin olive oil
    1 peach, peeled, pitted and chopped
    1 pear, peeled, cored and chopped
    1 apple, peeled, cored and chopped
    fresh lemon juice
    1/4 cup fresh raspberries
    1/4 cup chopped walnuts
    4 ounces Gorgonzola cheese, crumbled


    Recipe





    Arrange greens in salad bowl. Drizzle olive oil over greens and toss gently to combine. Combine peach, pear and apple with lemon juice. Add to greens and toss gently.
    Top with raspberries, walnuts and cheese.

    Makes 4 servings

    Variation:
    Combine fruit, olive oil and cheese and let stand 20 minutes before tossing with greens. This will enhance the overall flavor.
